Sticky Date Pudding

Sticky Date Pudding

Makes plenty!

Ingredients

Pudding

400g (15 oz) chopped dates

500ml (17oz) water

2 tablespoons baking soda

120g (5oz) butter …MAKE SURE ITS QUALITY, HARD BUTTER!

1 cup caster sugar

3-4 eggs

2-4 cups self raising flour, experiment but don’t make it too runny


Butterscotch sauce

380g (13oz) butter…again make sure its good stuff

500g (18oz) brown sugar

500ml (18oz)cream…needs to be heavy whipping cream if in U.S


Pudding

Bring dates to the boil. Once boiled put baking soda in, stir and let sit for five minutes.

While that is happening, cream butter and sugar, then add eggs and flour. Stir it all up to make a cake mix.

Then put dates into food processor or blender (you don’t have to). After that’s been blended pour it in with the cake mix. Stir it all up and then slam it in a tray that is greased and has paper on it.

Put it in a 180°C oven for 30-50 minutes or until you can stick a skewer in it and it comes out clean.


Butterscotch sauce

Bring it all to the boil till sugar dissolves and let simmer for 3 more minutes or so. WARNING it may be delicious but if you try to drink it all you will be sick!
